Piedmont's territory including the provinces of Novara and Verbano-Cusio-Ossola is characterised by the different altitudes, from the rice-fields to the top of the Alps, from the lakes to the hills with an incredible multitude of micro-climates and natural habitats. In the gastronomy of the "Land of the Lakes" a lot of fish is used. In these lakes there are lots of perch, white fish, fresh water fish, pike and bleak .....and in its streams the trout.

From milk products the most important is cheese that we can consider as one of the most known foods of our area. Novara is the home of Gorgonzola cheese while the king of cheeses of the alps lof the Ossola Valleys is the Bettelmat cheese that comes from the high altitude meadows. Also large quantities of local cheeses are produced like tome, ricotta cheese and butter. As for salted meats it is possible to taste them always in the Ossola area where the traditional products are: the renown prosciutto crudo (uncooked treated ham) of the Val Vigezzo, lard, coppa, bresaola, violino, pork, dryed meat and the typical mortadella made in a traditional way with a piece of liver.

During the last decades wines produced in the novaresi hills have reached the levels of the Piedmont wines for importance and have become part of the wine patrimony. During the last years the "Ghemme" wine as been recognised as D.O.C.G.. Other wines are also produced like the Gattinara, Sizzano, Spanna, Erbaluce and the Prunent typical of the Ossola.
Among the cakes the most known are the margheritine of Stresa and the amaretti of Pallanza.
